Introductory lecture (for all students together): by means of a comprehensive manual the practicals are explained in detail and the safety procedures are given (attendance obligatory). If the student is not present in the introductory lecture, the practicals can not be done..
Laboratory experiments (attendance obligatory):
1. Fermentation process with a bacteriocin-producing lactic acid bacterial strain: upstream processing, computer-controlled fermentation, and monitoring (on line and off line).
2. Fermentation process with a yeast strain: upstream processing, computer-controlled fermentation, and monitoring (on line and off line).
3. Analyses of the fermentation samples: determination of cell denisty (optical density and plating), cell dry mass (membrane filtration and gravimetry), antibacterial activity (bioassay), and residual sugars and organic acids and/or alcohols produced (HPLC).
3. Data processing (PC, Excel).
4. Modelling: build-up of a simple, mathematical model (PC, Excel).
5. Simulation excercise: first with a simple example, then with the experimentally collected fermentation data (PC, Excel).
6. Make-up of a report during the practicals (PC).
Presence is mandatory
The autonomous performance (in group and under supervision) of the upstream processing, the follow-up of a bacterial fermentation and a yeast fermentation.
The generation of data concerning growth and product formation of a selected bacterial and yeast strain, and the processing, modelling, and simulation of these data.
The final grade is composed based on the following categories:
PRAC Lab Work determines 50% of the final mark.

The evaluation of the practicum is a weighted average of personal engagement, sense for responsability, sense for initiatives, cooperation capacity, and reporting. Both group-related and individual contribution to the evaluation.
